🌶️ Mexican-Inspired Fresh Fettuccine with a twist.

Ingredients (Serves 4):
400g fresh Just Pasta Australia Fettuccine
2 tbsp olive oil
1 small red onion, finely chopped
2 cloves garlic, minced
1 red capsicum, sliced
1 green capsicum, sliced
1 fresh jalapeño, sliced (optional for heat)
300g chicken breast or thighs, sliced (optional: sub with black beans for vegetarian version)
1 tsp ground cumin
1 tsp smoked paprika
½ tsp chilli powder (adjust to taste)
Salt and pepper to taste
200ml thickened cream
Zest and juice of 1 lime
½ cup grated cheddar cheese (or Mexican blend)
Fresh coriander, chopped (for garnish)
Lime wedges, to serve
Instructions:
Cook the Fettuccine
Bring a large pot of water to a boil. Cook fettuccine for 3–4 minutes if fresh, until al dente. Drain and set aside.
Sauté the Veggies & Chicken
In a large pan, heat olive oil over medium heat. Sauté onion and garlic for 2 minutes until fragrant. Add chicken, capsicum, jalapeño, and spices. Cook until the chicken is golden and cooked through.
Create the Sauce
Lower the heat and stir in the cream, lime zest and juice, and cheddar cheese. Let it simmer until the sauce thickens slightly (2–3 minutes), season with salt and pepper.
Combine Pasta & Sauce
Toss in the cooked fettuccine and mix until well coated in the creamy, spicy sauce.
Serve
Garnish with fresh coriander and extra lime wedges. Serve hot and enjoy!
